Chicken cacciatore or “pollo cacciatore” is a meal from the Tuscany region of Italy and is a renowned northern Italian dish. The term “cacciatore” literally means "hunter" in Italian. In cuisine, “alla cacciatora” refers to a meal prepared "hunter-style". Our cacciatore is made with braised chicken (“pollo alla cacciatora”) but the original dish was was likely made with rabbit or other wild game dating back to the Renaissance period.
Fun Fact:
We know this Italian favorite as “chicken cacciatore” but it is “alla cacciatora” (female hunter) in Italian named in honor of the hunter’s wife.
