Lemongrass Chicken Vermicelli
Chicken thighs marinated in lemongrass, lime, honey and soy sauce. Lightly charred and caramelized. Served over vermicelli noodles, crispy vegetables, roasted cashews and fresh basil and cilantro, all tossed in a sweet chili sauce.
Lemongrass is known as Xả in Vietnam, and is commonly used to tenderize and marinate meats to give them a unique citrus-y taste.
In recent years, there has been a boom in lemongrass farming. Many former rice farmers have switched to lemongrass because it is easier to grow, yields higher profits, and is resistant to diseases.
